Today I want to write about making <Temple Kimchi>. Maybe most of you who are interested about Korea culture knows about Kimchi already. But Temple food is quite different with original Kimchi. 

First,  they don’t use garlics, onions, which makes our body stimulate and this will lower concentration. Monks have meditation time so this will cause bad effects. And second they don’t use any other ingredients from animals and fish. So mostly temple food is proper food for vegetarians (But they sometimes use honey) 

The temple image above is ‘Soo Woul’ Temple located in Seongbuk-gu , Seoul. In this temple there are 5 monks stuying about temple food and teaching people “How to cook temple food easily.”. They sometimes arrange cooking programs at Sunday for anyone who is curious about temple food.

When we eat food most of people only concentrate about the ‘taste of foods’. But Monks says that ” Taste is important but the most important thing is thinking how the ingredients came to us and appreciating to the farmers and fisherman. If you start appreciating , you will know how happy person you are.” 

The ingredients they use making temple food is only seasonal fruits and vegetables. So now Korea is in winter season , we use ‘ripe persimmon’ and ‘sweet pear’ instead of using sugar.

Looks quite spicy…. Yeah it is spicy haha πŸ™‚

But if you don’t like spicy Kimchi you don’t have to put too much ‘red pepper’ inside. Next I will make a video of making temple Kimchi. See you soon! Bye!
